Puffin

I’m sure I stole this piece from a book somewhere. If I did, and it’s yours, I’m truly sorry and I owe you at least a big kiss.

A favourite of Iceland and the Faroe Islands, esp popular in the Vestmanna Islands where tens of thousands are caught in nets every year. Usually skinned, soaked in saltwater, milk or ale, browned in fat and the boiled. Also frequwntly smoked, then boiled. In recent years, sautees or grilled puffin breasts have gained popularity, In the Faroe Islands puffins are sometimes stuffed with sweet cake dough – with raisins and sometimes spieces – then boiled.
