Coriander pesto
Whilst I was in Afghanistan making Cooking in the Danger Zone, I was invited on to the country’s most famous show: The Cooking Show. It was all about cooking, oddly enough. Desperate to come up with something the viewers might like but with limited ingredients, I invented this.
Makes 2 main course servings
Ingredients:
Large bunch coriander, roughly chopped
2 handfuls of peanuts, toasted
½ tsp cardamon pods, cracked, seeds only
¼ fresh red chilli, sliced
Zest & Juice of 1 lime
Olive oil
Salt & Pepper
To serve
200g cooked spaghettini
Olive oil for dressing
Method:
Prepare all the ingredients as listed
Add the coriander, peanuts, cardamon seeds, chilli and lime zest & juice to a blender.
Drizzle in oil whilst blending until you reach the consistency of...well...pesto. Season
Mix in with cooked pasta and serve
