Extraordinary Recipes

These aren’t that extraordinary, if the truth be told, but theyre interesting nonetheless.

Micro-recipes

10-hour leg of lamb
For a sensible slow-cooked meal, roast a leg of lamb for 10 hours or so at 80°C with roughly-chopped carrots, onions, garlic and 300ml water. Cover and baste every 30mins. Best to use a timer lest you get distracted.

Chicken with 40 cloves of garlic.
Throw 40 unpeeled garlic cloves, some herbs and a glass of wine in a casserole dish. Add a chicken breast side down and scatter some veg around it. Cover and cook at 200C for 1hr. Increase the heat to 220 and brown for 10 minutes.
